  • 500 g pork meat
  • 300 g pork head
  • 350 g pork ears
  • 100 g bacon
  • 250 g scarlet tongue
  • bay leaf
  • thyme
  • salt
  • peppercorns

Difficulty: medium preparation: 1 hour and 30 minutes – Cooking: 2 hours and 30 minutes.

Directions:

This is an appetizing dish that is prepared with different pieces of pork head. Clean the pieces of meat, removing all traces of cartilage and small bones.
Boil a large quantity of salted and flavored water. When boiling, throw in the pieces of pork, except the tongue, and cook them. Do the same with the tongue, but in another pot, adding a pinch of thyme and a few bay leaves to the water. Drain the meat and tongue and cut them into small pieces, along with the bacon. Put all the ingredients in a bowl, add salt and pepper, mix well and pour the mixture into a cloth bag. Tie the ends of the bag and place it under a weight for a few days. Store in the refrigerator.

Note:

Less expensive than most of the other pork meats, it is still very popular with consumers and it is considered that 60% of them are sold fresh. Moreover this meat, thanks to the progress of breeding and the controls of which the animals are the object, is less and less indigestible because it is less and less fatty. It is all the more tasty and of an excellent report presented in roast or cut out in chops.
